春秋以前，最初茶叶作为药用而受到关注。古代人类直接含嚼茶树鲜叶汲取茶汁而感到芬芳、清口并富有收敛性快感，久而久之，茶的含嚼成为人们的一种嗜好。该阶段，可说是茶之为饮的前奏。随着人类生活的进化，生嚼茶叶的习惯转变为煎服。即鲜叶洗净后，置陶罐中加水煮熟，连汤带叶服用。煎煮而成的茶，虽苦涩，然而滋味浓郁，风味与功效均胜几筹，日久，自然养成煮煎品饮的习惯，这是茶作为饮料的开端。然而，茶由药用发展为日常饮料，经过了食用阶段作为中间过渡。即以茶当菜，煮作羹饮。茶叶煮熟后，与饭菜调和一起食用。此时，用茶的目的，一是增加营养，一是作为食物解毒。《晏子春秋》记载，“晏子相景公，食脱粟之饭，炙三弋五卵茗菜而已”；又《尔雅》中，“苦荼”一词注释云“叶可炙作羹饮”；《桐君录》等古籍中，则有茶与桂姜及一些香料同煮食用的记载。此时，茶叶利用方法前进了一步，运用了当时的烹煮技术，并已注意到茶汤的调味。
